Emily Darchuk is a food scientist and the founder of Wheyward Spirits, a company that uses leftover whey from dairy processing to create an alcoholic spirit that’s helping prevent food waste. Every year, hundreds of billions of pounds leave the dairy food chain as waste, putting a strain on the ecosystem. Darchuk will discuss her innovative solution to create a viable new product that also helps break the cycle of waste, making food chains more efficient and effective.
